Ingredients
3 apples
100 g all-purpose flour
80 g almond flour (or ground almonds)
20 g corn flour
1 packet baking powder
Pinch of salt
150 ml whole milk or almond milk
80 g vanilla sugar
20 g white sugar
3 eggs
100 g melted butter
1/4 tsp almond extract
1/4 cup sliced almonds
Powdered sugar (for topping)
Preparation
Preheat the oven to 180°C (350°F). Grease a springform pan and line the bottom with parchment paper for easy removal.
Melt the butter and set aside. In a large bowl, beat the eggs with the vanilla sugar and white sugar until light and frothy. Add the melted butter, milk, and almond extract.
In a separate bowl, combine the all-purpose flour, almond flour, corn flour, baking powder, and a pinch of salt. Add the dry ingredients to the wet ingredients and whisk until smooth.
Peel the apples and cut them into cubes or thin slices, depending on your preferred texture. Fold them into the batter.
Pour the mixture into the prepared pan and sprinkle sliced almonds evenly over the top. Bake for about 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before removing from the pan. Dust with powdered sugar just before serving.
