Ingredients :
• 5 eggs
• 1/2 cup (120 g) plain, thick Greek yogurt (preferably full-fat)
• 1 cup (250 ml) 15% cooking cream
• 50 g of feta
• 100 g of grated strong cheddar
• 1 teaspoon dried thyme (or fresh thyme, if available)
• Salt and pepper to taste (be careful with the salt because of the feta)
• 9 sheets of phyllo dough
• 1/2 cup (120 g) melted butter
• 1/2 cup caramelized onions (recipe below)
• 1/2 cup diced roasted squash (see below)
Preparation :
1. Preheat the oven to 190°C (375°F).
2. Lightly spray 12 muffin cups with cooking spray or brush with melted butter.
3. Layer a sheet of phyllo dough and brush with melted butter. Repeat until you have 6 layers of dough.
4. Cut the phyllo dough into 8 squares and place them in the muffin cups. Repeat with the remaining sheets until you have filled all 12 cups.
5. Place about a tablespoon of caramelized onions and a tablespoon of roasted squash in the bottom of each mold.
6. In a bowl, beat the eggs, cream, yogurt, feta, cheddar, thyme, salt and pepper.
7. Pour the egg mixture into each mold, over the onions and squash.
8. Bake for 15 to 18 minutes, or until the pastry is golden brown and the filling is set in the center (it should not be runny).
Caramelized Onion Recipe
Ingredients :
• 6 large onions, thinly sliced
• 1/2 cup (120 ml) balsamic vinegar
• 2 tablespoons olive oil (or other oil of your choice)
• 3 tablespoons of sugar
• 1 tablespoon of salt
• 2 sprigs of fresh thyme
• 1/4 cup (60 ml) water
Preparation :
1. Heat oil in a large skillet over medium-low heat.
2. Add the sliced onions and cook gently until translucent and beginning to soften, about 15 minutes.
3. Add the sugar, salt, balsamic vinegar, thyme and water.
4. Simmer over low heat for about 1 hour, stirring occasionally, until onions are tender, lightly browned and caramelized.
5. Adjust the seasoning with salt or sugar, according to your taste.
6. Store caramelized onions in an airtight container in the refrigerator.
