Ingredients
1 cup all-purpose flour
1 cup raw sugar
¾ teaspoon baking powder
¾ teaspoon salt
1 cup of filberts
1 cup almonds
1 cup walnuts
1 cup pecans
1 cup Brazil nuts
2 cups pitted dates
1 cup dried cranberries
1 cup dried cherries (or candied cherries if desired)
4 eggs
1 teaspoon vanilla
Preparation
In a large bowl, mix together all the nuts, dates, cranberries, and dried cherries. In another bowl, combine the flour, sugar, baking powder, and salt, then sprinkle this mixture over the fruit and nuts. Use your hands to mix well so that everything is evenly coated.
Beat the eggs until frothy, then add the vanilla. Pour this mixture over the fruit and nuts, and toss gently to coat. Prepare your pans by lining them with parchment paper.
Divide the batter between two medium loaf pans, four small pans, or one large pan. Bake in a preheated 300°F (150°C) oven. Baking time will depend on the size of the pans: about 1 hour 30 minutes for a large pan, 55 minutes for two medium pans, and 45 to 50 minutes for four small pans.
Allow the cakes to cool completely before unmolding.
