Ingredients :
• 1 cup (100 g) almond flour
• 2 tablespoons cashew butter (or a mixture of cashew, Brazil nut, coconut – like Rainforest Butter)
• 1 tablespoon peanut butter (preferably crunchy and natural)
• 3 tablespoons of honey
• 1 tablespoon of maple syrup
• 1/4 teaspoon almond essence (optional, or substitute with vanilla)
• 2 tablespoons of almond milk (or other vegetable milk)
• 1 tablespoon of coconut oil
• Nuts for decoration (almonds, cashews, etc.)
Preparation :
1. Preheat your oven to 190°C (375°F).
2. Mix all ingredients in a large bowl to obtain a smooth paste.
3. Divide the dough into 14 small balls of about 3 cm in diameter.
4. Arrange the balls on a baking sheet lined with parchment paper. Lightly crush each ball with your fingertip, pressing gently.
5. Decorate with nuts of your choice and, if desired, sprinkle a little brown sugar on top.
6. Bake for 9 minutes, until the edges are lightly browned and the center remains paler.
7. Let cool on a rack before serving.
These cookies are soft and high in protein, perfect for a healthy and nutritious snack.
